Hyatt Regency Jacksonville Riverfront Announces Holiday Cooking Class

Jacksonville, Fla. (November 20, 2023) – Hyatt Regency Jacksonville Riverfront, a modern and sophisticated hotel located in the heart of downtown on the St. John’s River next to the scenic Main Street Bridge, announces a holiday cooking class for guests and local residents. During the event, attendees will work with Chef Mimi Lan to create a bánh mì charcuterie board ideal for any size of holiday party, from a large crowd to an intimate gathering.

“As the holiday season is known for hosting, we are thrilled to debut a fun and exciting culinary experience where attendees can learn to perfectly create a delicious dish for the upcoming festivities,” said Craig Steffenson, Executive Chef at Hyatt Regency Jacksonville Riverfront. “Through the cooking class, participants will work with the talented Chef Mimi Lan as she showcases her love and passion for sharing the most iconic Vietnamese dish, the bánh mì.”

During the class, attendees will prepare bánh mì charcuterie board. The dish will take the traditional Banh Mi sandwich and turn it into a deconstructed version of a charcuterie plate. Selected by Chef Mimi Lan, the dish is one of her favorites for a group gathering.

At the event, participants will learn how to make Char siu, a Cantonese-style barbecued pork from Guandong, as well as a Vietnamese lemongrass chicken, Vietnamese pickled daikon and carrots, fried vegetarian crackers, complete with a special bánh mì sauce. Chef Mimi will also teach the art of plating a charcuterie board including composition, placement, and garnishes. Additionally, guests will receive a gift bag with cooked char sui BBQ pork, cooked lemongrass chicken, marinades of both to replicate the dishes at home, bánh mì sauce, recipes of the dishes, and resources of where to get the ingredients.

Chef Mimi is a local Jacksonville chef who also travels to curate thoughtful dining experiences that showcase her culture and connects people through the art of food. She has worked in multiple Michelin Star restaurants around the world including Per Se in New York City and Gaggans in Bangkok.

The cooking class will take place on Sunday, December 3 from 9:30 a.m. to 1 p.m.  It is $100 per person.
