The 2025 Sprouting Project Dinner Series Returns to Omni Amelia Island Resort & Spa

The Popular Overnight Package Comes Back, While New and Unique Flavors Emerge at This Year’s Dinner Series – Omni Amelia Island Resort & Spa, is excited to announce the return of its annual Sprouting Project Dinner series, the monthly elevated five-course event where attendees are invited on an epicurean adventure exploring the resort’s onsite chef’s garden and Barrel Room. Each year the resort’s creative culinary team dreams up a delectable theme for each month highlighting a variety of flavors and tastes for this intimate southern-inspired farm-to-table experience.

This year the culinary team focused a few of the dinners’ themes around ingredients that were grown right on property. The Sprouting Project has been raising bees to help pollinate the plants around the resort as well as collecting the honey for occasions like this. This year Executive Chef Omar Collazo and his team will be planting tea plants in addition to the chamomile already growing, which was the inspiration for the September dinner. Some of the dinners’ themes are planned around what is in peak season such as brassica, a plant that covers cabbage, collard, and mustard families, that will be highlighted in November.

“When considering ingredients this year we wanted to be really intentional with our selections and choose ones that relate back to the resort”, said Executive Chef Omar Collazo. “For example, banana and olive were chosen because we have both trees on property, and we love to incorporate anything we grow onsite into the dinners. We had a lot of fun coming up with next year’s themes and look forward to treating guests to new and familiar flavors in a unique way.”

“My uncle (who lives in Puerto Rico) bought a big plot of land years ago and has been growing Bananas, Plantains, Tropical Fruit trees, and pollinates with Africanized bees. He brought me spawns of different plantains, ají dulce (sweet peppers mainly found in the Caribbean and Latin America) and bananas.”

Guests can also learn more about the resort’s sustainable growing practices via a tour of the state-of-the-art aquaponic greenhouse, expansive organic gardens, Barrel Room, chicken coop and large collection of beehives which are used to harvest honey and increase pollination throughout the garden.

This year’s Sprouting Project Dinners schedule and themes include:

·        March 22, 2025: Spring Herb

·        April 12, 2025: Allium

·        May 3, 2025: Seed

·        June 28, 2025: Banana

·        July 19, 2025: Stone Fruit

·        August 23, 2025: Honey

·        September 20, 2025: Tea

·        October 25, 2025: Olive

·        November 22, 2025: Brassica

·        December 19, 2025: Truffle

·        December 20, 2025: Truffle

·        December 21, 2025: Truffle

Tickets for general admission to each dinner are $119 per person, while the special Truffle dinners held in December 2025 will be $259 per person. Each dinner will kick off with cocktails and light bites at 6 p.m. followed by a five-course dinner at 6:30 p.m. A cash bar will be on site and seating is limited. For guests looking to extend their time on Amelia Island, the resort has brought back the popular overnight package which includes tickets to that month’s dinner as well as a welcome amenity.

Private dinners are also available for up to 10 people, starting from $350 per person without beverage pairings, and $475 per person with beverage pairings. The Sprouting Project consists of a state-of-the-art aquaponic greenhouse, an expansive organic garden, a large collection of beehives, chicken coop and a barrel room. The Sprouting Project also provides ingredients to the resort’s nine restaurants and lounges including Florida palmetto honey dripping from the comb and organic Satsuma jam at The Morning Table breakfast buffet and fresh basil for pesto at Natural Slice.

The Sprouting Project’s Barrel Room provides an opportunity to age honey varietals, vinegars, hot sauce and cocktails.
