Hyatt Regency Jacksonville Shares Signature Recipe for National Peanut Butter Lovers Day

In honor of National Peanut Butter Lovers Day (March 1), Hyatt Regency Jacksonville Riverfront, is sharing its signature peanut butter dessert recipe for the holiday.

The hotel’s Peanut Butter Balls are created by Craig Steffenson, Executive Chef at the property, to provide delicious a peanut-butter infused dessert at its SHOR Seafood Grill.

The no bake treats are pack with creamy peanut butter, powdered sugar and Rice Krispies cereal, and of course drizzled with chocolate.

Hyatt Regency Jacksonville Riverfront – Peanut Butter Balls Recipe

Ingredients

·         1 lb. of Creamy Peanut Butter

·         4 oz. of unsalted butter

·         1 lb. 2 oz. of confectioner’s (powdered) sugar

·         6 cups of Rice Krispie’s cereal

·         Chocolate chips, melted for drizzling (optional)

Instructions

·         Melt butter in a 1qt saucepot over medium heat.  Add peanut butter and mix well.

·         In a medium mixing bowl, combine the powdered sugar and Rice Krispies. Fold in the peanut butter mixture and mix well.

·         Scoop into small balls (preferable with a melon baler or a miniature ice cream scoop) and roll tightly (failure to do so will result in crumbles)

·         Line a cookie sheet with parchment paper to gather the rolled peanut butter balls.  Once rolled, cover with plastic wrap and refrigerate until firm (roughly 2 hours).

·         For an added delight, drizzle with melted chocolate chips!
