Measurable health improvements can be realized in a relatively short period of time once unhealthy foods such as meat\, dairy\, and saturated fats are removed from the diet. \nBlack and Latinx individuals have been especially hard hit by COVID-19 due to several factors\, including health care disparities\, the prevalence of underlying conditions\, and a disproportionately high rate of infection by the virus. We aim to reach these vulnerable populations by offering free classes targeting eight urban communities of color and taught primarily by persons of color. \nEach 4-week course will be limited to 30 participants to ensure a high-quality learning experience. Aim for 50 registrants per course to allow for attrition to reach an ideal class size of 30. The goal is to reach a primarily non-vegan.
